The inaugural ASPA and SHSK wine and canapés evening called, ‘Microbiome: The Hidden Hand of Terroir’ was a great way to begin the half-term break.

Parents joined natural wine expert Timothy Bayley and chef Olivier Hubert to enjoy a hugely informative and relaxed evening of sumptuous flavour combinations.

Eight organic and biodynamic wines from across France were presented by Timothy Bayley over the course of the evening and individually paired with super tasty morsels, created much closer to home in our own kitchen by chef Olivier, head of the Tatler award-winning team at St Helen’s. 

As well as the flavour sensations, the event challenged guests to think about what the expression ‘natural wines’ means. Why does one wine taste different from the next, even if it is made with the same grape variety? What is the significance of ‘terroir’ for a wine’s flavour?

The room buzzed with excitement in between each tasting about what was to come next – such was the success of the event that planning for the next one is already underway!
